Description The aim of this training project is the creation of skilled human capital, capable of designing and conducting research that could help the food industry to achieve competence and know-how to direct its development towards nutrition. In this respect, the skills required are to be found in security technologies, ingredients and bioactive compounds, in the process of formulation and production of foods with high nutritional value and nutrition. Therefore the project provides for the creation of 7 young researchers with the following skills: • 3 experienced researchers on techniques of encapsulation in polymeric matrices of bacteriocins, bacteria and phages, oriented to the development of new functional ingredients for food and packaging assets. • 3 researchers with high expertise in nutrition. Oriented to the formulation and development of foods with high nutritional value from innovative functional ingredients. • 1 experienced researcher in the promotion, design and management of project initiatives for research, aimed at nutrition as a development perspective of the food industry. The training courses last for 18 months (over 6 months for the selection phase) and are involved structures of particular relevance: • University of Naples - Department of Food Science • Tecnoalimenti S.C.p.A. - headquarters in Naples and Milan • ICI Farmaceutica • Codap S.p.A They work under the guidance and supervision of the Project Board, specifically identified. The aim of this project is to create researchers able to tackle with competence issues that today constitute an obstacle to the development of functional food and ingredients and that is fully consistent with the requirements of the applicant companies and the industry reference. Indeed, the changing food market and the rapid changes in consumer tastes and expectations have changed significantly the horizon for the food industries, expanding the future supply more and more towards health. Consumer need push, therefore, the food and ingredients market to explore new directions, contemplating the role that food should deliver in line with the recommendations of nutritional experts. The food and ingredients industries, to look for developments on the nutrition front, come up against the complexities associated with functional instability of the ingredients of interest to the major technological treatments in use and many external factors and, moreover, the technological difficulties associated with product development safe, effective, stable and organoleptically impeccable. The training project is aimed specifically at the creation of these skills.
