Description	The main objective consists in the education of eight researchers, of high level capable to lead industrial research projects in Research Centers and/or R&D of industries of the olive oil chain. At the end of the education the students will reach an extremely deep interdisciplinary technical, scientific and management knowledge. Two different educational paths have been built: the first one is focused on processes for producing emulsions, whilst the second one is more dedicated to thecnologies. The educational program is organized with a first common part dealing with general matters (about 1 month) followed by 7 months of which the first 480 hours at the university attending courses on common arguments, and the second modulus of 480 hours will deal on different topics depending on the specific educational path The process expert will be educated especially on rheology, emulsion physical chemistry, specific analytical techniques, emulsification techniques. The technology experts apart the characterization techniques will have more topics on the industrial aspects of emulsion production. Programming, management, and evaluation of research projects of industrial interest will be topics for the education of both the technical work profiles. At the end it is expected that the researchers in addition to the scientific and technical knowledge, must have a good feeling for problem solving approach The last 6 months are dedicated to application and experience as a sort of stage at the project proposers. “ of them will stay in the University labs, other two at the researcher center ITM, other two students will stay in the designing department of PETRAMALE ACCIAI, and finally one in the GABRO OIL and in SATECA labs respectively. Finally the last two months will be dedicated to complete the education in the field of innovation management.
